Smokey chickpea burgers

​I also call these chorizo burgers as even my carnivorous husband enjoyed these commenting that they had a bit of chorizo flavour, all down to the smoked paprika of course.

Thumbs up from the kids as well.

Ingredients

  • 1 tbs oil

  • 1 onion, diced

  • 1 carrot, finely grated

  • 1 clove garlic chopped

  • 225g smoked tofu

  • 300g cooked chickpeas (1 can drained and rinsed)

  • 1 tsp smoked paprika

  • 1/2 tsp cumin

  • 1 tbs tomato puree

  • 1 egg (optional but helps to keep them together)

Method

  • Preheat the oven to 180C

  • Gently heat the oil in a pan, sauté the onion until soft

  • Add the carrot and garlic and cook for a further few minutes

  • Grate the tofu burger or break up with your fingers

  • Put the onion and mixture and tofu in a food processor along with the rest the ingredients

  • Pulse to a thick paste, I like to leave some coarse bits of tofu and chickpea for texture, and season with salt and pepper

  • Shape into patties and place on a well greased baking tray

  • Bake in the oven, turning over once for around 20 minutes until cooked through

  • You could also shallow fry if preferred
